
THE WINERY
Situated just a step away from Montefalco, the winery forms a single entity with the farmhouse. The result of a precise
decision to merge "home" and "shop", it is a place where visitors become re-found friends and a glass of wine and a bruschetta become an occasion for an encounter made up of words, smiles, and life. Here the master is undoubtedly Sagrantino di Montefalco D.O.C.G. (click here for download the technical card) wine, which expresses, more than any other, the marriage between tradition and precise technological choices. Grapes are harvested by hand and packed into small cases. At the winery, they are subjected to the first step in processing, or rather they are destemmed and pressed using the gentlest methods. The subsequent phase of wine-making takes place in temperature-controlled fermentation vats which, when skilfully managed, make it possible to guide the fermentation process based on the most modern oenological practices, At the end of alcoholic fermentation, malolactic re-fermentation is induced using only physical means and then the wine is allowed to rest inside oak barrels of various species and origins for the time required to age the product.
Before it can be uncorked, every single bottle will host its precious nectar for at least six months, allowing all of the typical sensory evolutions of the vine to take place within it. The estate produces olive oil and other characteristic wines of the territory.
